Molly's Super Duper Wuper Never Fail Fudge

Molly's Super Duper Wuper Never Fail Fudge


Ingredients:
7 1/2 oz Marshmellow Fluff ( We used just half a can)
6 oz evaporated milk
1 stick butter or margerine
2 1/2 cups sugar
3/4 tsp salt
3/4 tsp vanilla extract
1 bag of choco.chips

Instructions:
Grease a 9 inch sq pan. Combine the Marshmellow Fluff, evaporated milk, butter or margarine, sugar, and salt in saucepan. Stir the mixture over low heat until fully blended. Heat to full rolling boil being careful not to mistake escaping air bubbles for boiling. BOIL SLOWLY, stirring constantly for 5 minutes. Remove from heat, then stir in the chocolate chocolate chips and vanilla until it is melted in. Put in grease pan and wait for it to firm.

Boneless Buffalo Chicken

Boneless Buffalo Chicken

Ingredients:
4 boneless skinless chicken breasts ( about 1 1/2 lbs)cut into 1 1/2 in. chunks
1/2 buttermilk
1 teaspoon salt
3/4 cup hot sauce( a relativy mild cayenne pepper based hot sauce, avoid hotter sauces such as tabasco~we used franks)
1/4 cup water
1/4 teaspoon sugar
1 tablespoon unsalted butter
1 1/2 cups cornstarch
4 large egg whites

1/2 cup all purpose flour
1/2 teaspoon baking soda

4 cups vegetable oil

1. MARINATE Combine chicken, buttermilk, and salt in large zip lock bag or bowl and refrigerate 30 min. or up to 2 hours. Combine hot sauce, water, sugar, butter and 2 teaspoons cornstarch in a saucepan. Whisk over medium heat until thickend, about 5 minutes.


2 COAT Whisk egg whites in shallow dish until foamy. Stir flour, baking soda, remaining cornstarch and 6 tablespoons hot sauce mixture in second shallow dish until mixture resembles coarse meal. Remove chicken from marinade and pat dry with paper towels. Toss half of chicken with eggs whites until well coated, then dredge chicken in cornstarch mixture, pressing to adhere. Transfer coated chicken to plate and repeat with remaining chicken.
3. FRY Heat oil in dutch oven over medium high heat until oil registers 350*. Fry half of chicken until golden brown, about 4 minutes, turning each piece halfway through cooking. Transfer chicken to paper towel lined plate. Return oil to 350* and repeat with remaining chicken.






4. TOSS Warm remaining hot sauce over medium low heat until simmering. Combine chicken and hot sauce mixture in large bowl and toss to coat. Serve with love, celery sticks, carrots and ranch dressing <3

* Drinking milk is advised because it brings the heat down inside your mouth

I am very sorry I have not posted in awhile. I have been bustling around preparing for the Christmas party and Thanksgiving. Also school work. So I will try harder to put up a new recipe each week.

Cheesecake Miniatures

Cheesecake Miniatures

Ingredients:
12-15 vanilla wafers
16 oz. cream cheese, softened
3/4 cup sugar
2 eggs
1 tsp. vanilla
1 Tbsp. lemon juice
1 (21 0z) can cherry pie filling
paper or foil muffin tin liners
Instructions:
Place a wafer at the bottom of each liner in a muffin tin. Blend cream cheese and sugar together. Add eggs, lemon juice and vanilla and beat until soft. Fill liners 2/3 full. Bake at 350 for about 15-18 minutes or until set. Cool. Remove from pan. Top with fruit filling. Serve immediatley or store in fridge until serving time.

Apple Crisp

Apple Crisp

Prep time:5-10 minutes

Total Time: 1 hour

Ingredients:
6 aptples,peeled and sliced
1/2 cup sugar
2 teaspoons lemon juice
1/2 teaspoon cinnamon (I always throw in a little extra, just in case.)
1/4 cup water

1/2 cup packed brown sugar
3/4 cup flour
1/4 teaspoon salt
6 tablespoons butter, melted
Instructions:
Mix first 5 ingredients together and put in 8x8 inch pan. Set aside. Mix rest of ingredients, dry first, then add butter. Mix until coarse, then sprinkle on top of apple mixture.Bake at 375 degrees for forty min.
